They have a broad antimicrobial action and are effective at inhibiting most spoilage and pathogenic bacteria. Sodium Diacetate is a 1:1 complex of sodium acetate and acetic acid. It can be used as a preservative for foods and has an E number of “E262”. Sodium Diacetate can act as a buffer to maintain relatively constant pH.
