The fruit is carefully harvested and handled rapidly prior to processing. The cherries are then destemmed, washed, sized, pitted, and sorted. The cherries are then individually quick frozen in a commercial freezing unit, packed at 0°F - 5°F, and stored in accordance with good commercial practices at 0°F for the best preservation of this product.
