The fruit is individually quick frozen, packaged in a polylined box, passed through a metal detector, and stored at 0°F or less. The IQF cherries are removed from the freezer, mechanically halved, conveyed across a shaker screen, sorted, and inspected. The halved cherries are sent through the slicer a second time, producing a random-cut diced cherry (approximately 3/8" dice). The fruit is repackaged and passed through a metal detector before returning to the freezer.

Cherry Central Frozen Dark Sweet Cherries, Elliott Pitted (FP04-04) are prepared from the properly ripened fruit of commercial dark sweet cherry varieties. The fruit is carefully harvested and handled rapidly prior to processing. The cherries are then size graded, destemmed, washed, sorted, drained and Elliott pitted. The cherries are packed and frozen in accordance with good commercial practices and maintained at 0°F or less for the best preservation of this product.

Cherry Central Organic Montmorency Red Tart Cherrie, IQF - Diced (FP07-142) are prepared from properly ripened fruit of the red tart cherry variety group Montmorency. Cherries are washed, de-stemmed, sorted, sized, and pitted. The fruit is individually quick frozen, packaged in a polylined box, passed through a metal detector, and stored at 0°F or less. The IQF cherries are removed from the freezer, mechanically diced, conveyed across a shaker screen, sorted, and inspected.
