Chymotrypsin is a proteolytic enzyme crystallized from an extract of the pancreas gland of the ox. Chymotrypsin is a proteolytic enzyme, which preferentially catalyzes the hydrolysis of peptide bonds involving L-isomers of tyrosine, phenylalanine and tryptophan.The optimum pH is 8.0. The enzyme is inhibited by heavy metals, the natural trypsin inhibitors to various degrees. Enzybel ultrapure Chymotrypsin is extracted from bovine pancreas and has been further purified by an affinity chromatography to remove trace contaminating proteases.

Pancreatin is a mixture of several digestive enzymes produced by the exocrine cells of the pancreas gland. It is mainly composed of amylase, lipase and protease enzymes. It is a digestive enzyme produced by the pancreas and delivered to the small intestine for the hydrolysis of complex nutrients. Pancreatin contains enzymatic components including trypsin, amylase and lipase, ribonuclease, and protease, produced by the exocrine cells of the porcine pancreas. This combination of enzymes allows it to hydrolyze proteins, starch and fats.
