In the first stages of ripening, yeasts are involved in the deacidification of the cheese surface and thus create suitable conditions for the growth of the red smear bacteria. Its most typical representative is Brevibacterium linens ensures the formation of the characteristic pigmentation (orange, yellow-orange, cream-colored) and, thanks to its proteo- and lipolytic activity, contributes to the production of the typical aroma components.
