Whilst boiling Emwaxy® HV 500 yields a medium viscous and clear solution. Furthermore this starch has an excellent heat, shear, sterilization and freeze-thaw stability, even in acid solutions and under extrusion conditions. Besides Emwaxy® HV 500 shows an excellent water binding capacity, excellent clarity as well as good shelf life and can be used with in a concentration of approx. 5%
