  • Cooked dispersions of PURITY® TF have a smooth, short texture when hot and set to an opaque gel when cooled (7% concentration).
  • Gelled products made with PURITY® TF are not recommended for extended or cold temperature storage since they have a tendency to exhibit syneresis (water release).
  • For extended storage stability, use of one of National's modified food starches is advised. This all-natural thickener also provides opacity to products such as soups, sauces and gravies.
  • PURITY® TF will gradually lose viscosity if held at high temperatures or subjected to acidic or high shear conditions.
Features and Benefits
  • Since PURITY® TF food blend is a finely ground pregelatinized starch, it sTFuld be blended with other dry ingredients to facilitate its dispersion.
  • Preparations made using PURITY® TF food blend are smooth, sTFrt-textured and heavy bodied.
  • PURITY® TF food blend exhibits high cold viscosity which thins out slightly upon heating.
