- Typical characteristics
Minerals:
APP contains a complete profile of the minerals (Ca, Cr, Cu, Fe, Mg, K, Se, Na and Zn) which are required for the human health and growth. The high amount (ppm) of Ca (300) is comparable to Whey Prot. Concentrate (390). Concentration (ppm) of Iron (Fe, 20) and Magnesium (Mg, 5000) is significantly higher compared with other protein sources such as Salmon hydrolysate (Fe, 2.1) and Whey Prot. Isolate (Fe, 1.4 and Mg, 60) (p<0.05).
Amino acids:- Pepsin digestibility test result for APP is 99.4% and APP is a complete protein since it includes a complete amino acid profile with all 9 essential amino acids and 10 non-essential ones.
- The amounts (g/100g) of two essential amino acids, namely Lysine (11.1%) and Methionine (3.88%) are significantly higher than those of Salmon hydrolysate (6.9 and 2.4%), Pea Prot. Isolate (7.4 and 0.8%), Whey Prot. Concentrate (8.8 and 2.6%) and the Collagen peptide (3.4 and 0.7%) (p<0.05).
- The Lysine and Methionine essential amino acids support for the following functions in the human body:
- Lysine
- Growth and tissue repair
- Stabilizes the basic functions of the body, such as sleep and metabolism.
- Lysine is the substrate of collagen, and the main structural protein in skin and connective tissue.
- Lysine is used for preventing and treating cold sores (caused by the virus called herpes simplex labialis).
- Methionine
Serves as the substrate for other amino acids such as cysteine and taurine. It is also used for increasing the acidity of urine, treating liver disorders, and improving wound healing. Other uses include treating depression, alcoholism, allergies, asthma, copper poisoning, radiation side effects, schizophrenia, drug withdrawal, and Parkinson's disease.
Protein Factors- The amount of the collagen protein in APP is approximately 0.56% (g/100).
- APP has a high score of PDCAAS at 1. which is comparable to the Whey Protein and white egg proteins with PDCAAS at 1. PDCAAS score is an evaluation related to the protein quality and digestibility of the amino acids. The major allergen in fish is parvalbumin, a protein of 12 kDa containing 108-109 amino acid residues. Concentration of this allergen in raw Pacific Whiting Hake was 47,250 ppm which decreased into 93 ppm in APP (99.8% reduction).
Bioactive peptides
Another uniqueness of APP is the high percentage of the low molecular weight peptide fractions. Almost 71% of the peptide fractions have a molecular weight of ≤5.90 KDa which was the greatest amount compared to Aroma Fish powder (27%) Pea Prot. Isolate (3.19%) and Whey Prot. (0%). Based on the previous research reports of Shahidi et al. 2011 and other literature the low molecular weight fractions of the proteins are responsible for the functional and health promoting effects. Bioactive peptides indicated are to have several functional properties and bioactivities such as antioxidative-, antimicrobial-, antihypertensive-, anti-inflammatory-, or antihyperglycemic- effects on the human body.
