Potassium sulfite is widely used in industry. It is produced within the framework of the combustion of black powder, thus in the reaction of a sulfur dioxide with water. If it is synthesized in this way, further potassium carbonate solution is required. The product is used, for example, as a reducing agent and fixing agent in the photographic industry in developer solutions. Furthermore, potassium sulfite solution is used as an etching agent in the electrical industry or as a bleaching agent for sugar.
A further field of application is also given as solid metabisulfite form, as an additive in foodstuffs such as wine. Here, the potassium metabisulfite sulfite functions as a browning accelerator. The additive potassium metabisulfite is also known as E224 and is used as a preservative, antioxidant or color stabilizer. This includes the sulfurization of wine. In addition, potassium metabisulfite is also referred to in this context as dumpling whitener, so that the dumplings do not become gray during processing. In the food industry, potassium metabisulfite prevents the reaction of the food with oxygen. This makes it possible to preserve many different, generally very quickly perishable foods, as well as transport them over longer distances. In this way no dyes or flavors are degraded, the product remains "fresh" in the quality relevant for the trade. However, potassium metabisulfite destroys the vitamin B1 and is therefore not used in milk products or cereal products.
