Organic Medium Invert Syrup is the liquid form of organic cane sugar which has been dissolved in water and treated with natural invertase enzyme derived from yeast. This addition effects a controlled hydrolysis of sucrose into invert sugars (glucose and fructose in equal quantities). This particular product undergoes a partial conversion which creates an Organic Medium Invert Syrup.
