Cardamom has been used since the start of the Ancient Egyptian empire, with earlier traces of it use in ayurvedic medicine. Originating in south-east India, it grows above a certain altitude, flourishing in partially shady conditions in the undergrowth of tropical forests. Today it is widely cultivated throughout central America and particularly in Guatemala, a profitable crop produced entirely for export. Whilst the name cardamom is applied to other species, it is the fruit of Elettaria cardamomum that is dried to generate the green cardamom that is used as is or ground for distillation and essential oil production.
