"We, the Rücker dairy and cheese factory, are a North German family business. Our head office is in Aurich, East Friesland, we have a second location in Wismar, Mecklenburg-West Pomerania. We are the fourth generation to run the business ourselves as the Rücker family.

The essentials have remained unchanged since the founding year 1890 : Then as now we process the high-quality milk from farms in Germany's coastal regions into cheese specialties of the best quality. At Rücker, we produce for retail, wholesale and the processing industry. Firmly anchored in northern Germany, we have always delivered to dealers all over the world. After all, here in the north the horizon is far. Always open to new things, we like to be inspired by cheeses from other countries and interpret them as coastal specialties made from fresh cow's milk.

Rucker BACK Old Swede develops its unique character during its maturing period of several weeks. Depending on the duration, it develops a mild or a spicy taste. In our cheese cellars in Wismar, the Alter Schwede breads lie on untreated spruce boards. Regular brushing with salt water and coating with red cultures gives the cheese its typically orange, edible rind and its incomparable taste.

Rucker Old Mecklenburg is pure nature. The creamy semi-hard cheese matures in our Wismar cheese cellars for six to eight weeks on untreated spruce boards. We brush it regularly with salt water and coat it with the finest red cultures. The taste of the Alt Mecklenburger changes depending on how long it has matured. We produce this specialty in four variants: Mild, strong, hearty and typically North German with plenty of caraway.

Rucker Frisian shepherd's cheese are made according to Paul Rücker's recipe from fresh farmer's milk from the coast. Like its Greek counterpart, our white cheese matures in brine for up to four weeks. So it comes to the table juicy, mild and spicy at the same time and completely lactose-free - for wholesome enjoyment. Our Frisian cheese is an unusual and very tasty alternative to gratins.

Rucker grill and pan cheese is the ideal vegetarian addition to any barbecue fun. And no matter whether you are a cheese fan or a vegetarian we guarantee variety for all connoisseurs with three varieties: natural, herbs and chili.

Rucker Frisian herder cheese salad cubes are bite sized cheese appetizers marinated in fine rapeseed oil with herbs or with olives and herbs. Mildly salty and finely sour. Mediterranean enjoyment interpreted Frisian that's what our lettuce cubes in fine oil and with strong herbs.
