Saffron is a spice derived from the flower of the plant of the same name (Crocus sativus). Each flower contains three dark orange to reddish brown stigmas, which must be separated by hand from the rest of the flower and dried to obtain the saffron. It has a bitter taste and is mainly demanded for the yellow color it gives to food. Saffron is harvested in Spain between October and November.
