This hydrophilic grade has a lipophilic group of stearic acid, giving an HLB value of 7, which provides a balanced affinity for both water and oil phases, stabilizing both oil-in-water and water-in-oil emulsions. It has excellent properties for stabilizing emulsions and improving the texture of food. This emulsifier also prevents the thickening and blistering of chocolate, as well as the adhesion of bakery doughs, candies, gummies, and other food products to machinery. Its superior water-oil exchange improves the crispiness and blooming of fried products.
