Manildra’s Innovation Center in Leawood, KS opened in 2016 with the vision of providing top-notch service through custom product development, a space to come together to collaborate on new ideas, and a platform for product experimentation, support, and fine-tuning.

Organic GemPro

GemPro® Extend Vital Wheat Gluten is isolated from hard wheat flour by natural wet-processing techniques and followed by a delicate flash-drying process. This product retains the vitality or viscoelasticity of wet gluten before the drying step. GemPro Extend® provides greater extensibility, making it ideal for sheeting products such as, pizza, flatbreads, and crackers.

GemPro® Extend

GemPro® 4400 is a wheat protein prepared by a unique and proprietary process resulting in a product that imparts moderate elasticity and extensibility to dough systems. It improves the machinability of dough and imparts firmness to pasta products. GemPro® 4400 is particularly useful as an egg white replacer in pasta and as a protein improver in bakery products resulting in enhanced machinability, increased volume and excellent texture. Applications include whole grain baked/extruded products, biscuits, batters and breading.

GemPro® 4400

GemPro® 3300 is a wheat protein with 90% protein. It is produced from wheat gluten by a unique and proprietary process yielding a product that imparts increased extensibility to dough systems. It possesses good binding and film formation properties. GemPro® 3300 improves the machinability and relaxation of dough, and enhances the structure, texture and protein content of bakery products, breakfast cereals, snacks and nutritional products. Applications include flour tortilla, pancakes, muffins, cakes, crackers, nutritional bars, egg replacers in bakery products.

GemPro® 7700 is a feed-grade, water-soluble, lightly hydrolyzed wheat gluten prepared by a unique and proprietary enzymatic process. It incorporates easily in water, forming a homogeneous suspension and has excellent solubility when used alone or as a calf milk replacement. GemPro® 7700 is designed for use as calf milk replacement.

Organic GemStar® 100 is certified organic, native (unmodified) wheat starch isolated from wheat flour by unique wet-processing techniques followed by a flash-drying process. This product has the typical distribution of large and small starch granules. Organic GemStar®100 has general applications in organic bakery products, breakfast cereals, snacks and other processed foods. The Hamburg, Iowa, manufacturing facility has been Certified Organic by Quality Assurance International.

Organic GemStar® 100

GemGel® 50 is an economical, pregelatinized, native wheat starch produced by a unique drying process. This product hydrates instantly in water and generates a lower viscosity than GemGel 100. GemGel 50 has general applications as an instant thickener in bakery products, breakfast cereals, snacks, other processed foods, and a variety of industrial applications.

GemPro® DVG is isolated from hard wheat flour by natural wet-processing techniques and followed by a high-temperature flash-drying process to produce a devitalized wheat gluten. The protein is heatdenatured thereby losing its vitality or viscoelastic properties. GemPro® DVG is ideal as a protein enhancer in a variety of food applications where strength and elasticity are not needed in the food product.

Organic GemPro® HPG is a natural, wheat protein extracted from high quality, certified organic wheat flour by a unique and proprietary process to yield a 90% protein product. It has a high degree of water absorption and exhibits strong viscoelastic properties. This highly functional protein is ideal for formulating a variety of organic bakery products, breakfast cereals, snacks and other food products. Applications include weight management products, frozen dough, flat breads, pastas, pizzas. The Hamburg, Iowa, manufacturing facility has been Certified Organic by Quality Assurance International.
