- PURITY® W modified starch is easily cooked and produces suspensions which are high in viscosity, short textured, smooth and clear. These suspensions are considerably higher in viscosity than those obtained with conventional starches.
- PURITY® W modified starch will not set to a gel upon cooling and is extremely stable even when subjected to adverse storage conditions.
- The product is very versatile and works extremely well in neutral as well as some acid systems.
