- NATIONAL™ 4012 modified starch develops a smooth, short texture and develops viscosity more slowly and at higher temperatures than conventional starches. Therefore, it permits more thorough mixing inside the high temperature process which results in better heat transfer.
- It also provides excellent stability during refrigerated and frozen storage and has good resistance to high shear and acid conditions.
- This product is available under Ingredion Incorporated’s TRUETRACE® Identity Preserved Program for non-GM products.
