- NATIONAL™ 1658 modified starch provides a heavy body and a smooth short texture when cooked in an aqueous system.
- It also has excellent cold temperature storage stability making it well suited for many refrigerated and frozen foods.
- NATIONAL™ 1658 modified starch is recommended primarily for low acid foods, like puddings, but can also be used in high acid products that are not subjected to excessive heating or agitation.
