Herbacel® AQ® Plus citrus fiber is obtained from freshly harvested apples (resp. citrus fruits) which are gently dried after extracting the juice (and oils). Non-fibrous compounds such as plant-specific sugars, coloring and aroma components are carefully removed during several washing steps, whereby the natural cell wall structure is practically maintained. This results in neutral sensory properties as well as high water-binding and retention capacity and furthermore it improves the nutritional physiological quality of the product. These high-swelling fruit fibers ensure longer periods of satiety, are beneficial for improving gut motility and stimulate digestion.

Herbasweet® is the neutral sweetness of apples. It is characterized by its light color and low acid content. HERBAPEKT® LV are pectins of low viscosity with a dietary fiber content of at least 80%. Herbapekt® LV pectins have been designed for enriching beverages or nutritional supplements with dietary fibers, as a physiological effective dosage is limited by the otherwise high viscosity build-up of pectins. Due to the stability of pectin-based soluble dietary fibers in fruit- juice beverages with lower pH, these low viscosity pectins are a preferred option in such applications. Additionally, the improved cold solubility of the agglomerated Herbapekt LV-pectins is ideal for instant products.

HERBAPEKT® APE is produced by drum-drying liquid pectins. The resulting products contain approximately 25 % dietary fibers in the form of highly esterified pectins. Hence apple pectin extracts also possess the viscosity-increasing and gel-forming properties characteristic of pectins. Even more important however is the nutritional physiological effect of pectins to bind bile salts, which assists the regulation of blood cholesterol levels. Apple pectin extracts furthermore contain the apples’ own fruit sugars, mainly fructose and glucose as well as fruit acids and typical phenolic compounds of apples. This significantly contributes to the pleasant fruity-acidic aroma. On its own or in combination with other ingredients, apple pectin extracts lend themselves very well to food supplementation.
