The olive grove is located in the middle of the Alpilles massif, in the legendary Vallée des Baux de Provence, in France. It is surrounded by hills where the olive trees are cultivated on hillsides. The family farm has existed since 1860, participating to the cultural heritage of olive cultivation in the Vallée des Baux de Provence and La Crau. The creation of their own mill followed 23 years ago for the pressing of their olives: the varieties Béruguette, Salonenque, Grossane and Verdale des Bouches-du-Rh6éne. The 35-hectare family farm, passed down by the manager's father, was one of the first certified olive farms in Organic Agriculture in France 30 years ago. It is equipped with high-performance equipment, combining respect for traditional methods and modern extraction process, to optimize the typical flavors and guarantee perfect hygiene.
- Organic Certified Olive Water
Olive mill wastewater containing vegetation water, so called «margines» in French is certified organic. It is a by-product obtained during the extraction of virgin olive oil from the water naturally contained in the fruit. After crushing and kneading the olives, a machine called “decanter” separates the solid elements called “pomace” and the two liquid elements go to the centrifuge to be separated; oil on one side and water called «margines» on the other. Biotechnological applications valorizing this effluent significantly contribute to reduce the environmental impact of this waste.
