- Production process information
Extraction in water followed by purification and enzymatic hydrolysis towards a chain length of 10 fructose units and higher. The enzyme used for the hydrolysis is an endo-inulinase (Novozyme 960) from non-GM Aspergillus niger. Aspergillus niger is commonly used as a production organizm for enzymes (processing aids), as well as the production of food ingredients (eg. citric acid). The origin of Novozyme 960 goes back to Aspergillus niger ATCCn° 16882.
