Our origin is in Berlin, Mehringdamm 51, Kreuzberg. There, in 1925, the merchant Fritz Preller founded the company with the state-loyal name "Germania Nahrungsmittelfabrikate". The business idea was to sell chicken protein powder directly to bakeries. Under the product name "GERMANIA-S" we were able to offer a chicken protein powder with good whipping properties. In addition to other products for bakeries, we set up a butcher department as a second mainstay. Spices and sausage aids were sold. The customers were mainly based in the eastern provinces of the then Free State of Prussia, in Saxony, Thuringia, Mecklenburg and Anhalt. At the time of the second Berlin crisis (Khrushchev ultimatum, from 1958) we searched intensively for a second production facility in what was then West Germany because of the threat to West Berlin. Finally we found a suitable property in Miltenberg am Main, which we were able to purchase. Because of the Berlin funding for manufacturers and first-time buyers, production initially remained in Berlin. It was not until 1991 that the company headquarters were completely relocated to Miltenberg and production in Berlin was stopped.

Germania-S® is a standardized raw material for all protein recipes such as meringues, creams, macaroons. It is immediately soluble, quick set-up on whipping, long foam stability, assured baking effectiveness when baking patties and slices.

Makrofix® replaces the previously necessary roasting of the macaroon mass, which brought cohesion through partial coagulation of the protein. Makrofix regulates the water binding and viscosity and thus achieves this smooth cohesion. The heating only serves to dissolve the sugar, all other components are stirred into the sugar solution and worked through without further heating.

GST 64® is a milk protein based mix for the production of bread and pastry spreads. It is cold-soluble and, after a short swelling, ready to be applied and also suitable for spraying.

Germa-Gel

Torta-fix® is a whipping concentrate for the safe production of biscuit and sand masses. It is tailored to the raw materials commonly used in baking: wheat flour type 550,granulated sugar KF and shortening. It is stirred or beaten with all the ingredients in one operation to the appropriate mass. The good impact tolerance brings security and optimal volume. It can be used for all biscuit and sand masses in the all-in process

Gerpektin® is mostly used for dominoes and cake mirrors. It is a pectin preparation based on citrus pectin with a pure, natural fruit flavor.

Makrofix®

Germania Backmittel Fritz Preller KG Pectin Apricot is versatile, freeze-proof and bake-proof apricot. It can be used  for deep-frozen dough pieces, on fried pastries, for dipping (bundt cake), on sugar icing. This product is sprayable and spreadable. Store leftover jelly mixture can be stored in the refrigerator and reheat if necessary.

Germa Gel is a crystal clear cake glaze. It is economical to use with an addition of 20g per liter. This product is purely vegetable. The effective gelling agents are carrageenan, pectin and locust bean gum. It is gelatin-free and can be mixed with water or fruit juice. It remains stable even when aromas, spices or spirits are added.

Germania Backmittel Fritz Preller KG Juice Binder Neutral sets slowly, so it is very well suited for large amounts of juice. Cooking to bind the juices is no longer necessary. The fruit fillings are baking and cut resistant. Germania juice binder can be frozen and retains its stability even when thawed.

Germa-Gel® TK 50 is a crystal-clear cake glaze with an addition of 50 g per liter. It is a high quality dew and frost stable without loss of structure, through the use of carrageen, thickening agents and pectin. It is gelatine-free and can be used both as a cake glaze and as a spray gel.
