Our corn is grown in Western Canada on healthy organic soils. It is part of Fieldstone Granary's coordinated Organic Producer plan, where crops are grown within one degree of separation, according to the high standards of the Canadian Organic Regime. This way Fieldstone can assure a high level of purity and integrity of the grain.

- Mill into a course or medium cornmeal to make grits or polenta, or as part of a cooked breakfast cereal
- Mill into flour to make quick breads, muffins, cakes and cookies. Corn flour may be substituted for part of the wheat flour in recipes. Due to its lack of gluten, you may wish to combine with high-gluten flour when using it for baked goods intended to rise, such as breads and cakes.

- Whole grain corn is typically ground into flour for use in baked goods and snacks or medium grind for dishes such as polenta and grits.

Fieldstone Organic’s packaged grains, seeds and legumes come in food grade packaging that allows breathability. It’s important that packages are stored in a clean area, free from pests. Glass jars work well to store smaller quantities in the kitchen.Should I rinse grains and legumes prior to use?
Whole grains and legumes should be rinsed before sprouting and/or soaking.How long can I store whole grains, legumes and seeds?
Most whole grains, legumes and seeds can remain stable indefinitely if stored in ideal conditions. Store them in clean, dry, low light, cool storage and rotate your supply. As stored products are used replace and utilize on a systematic basis.Do all grains and seeds have the same shelf life?
As oats are a softer grain regular turnover is recommended. Flax is an oily seed and should also be purchased based on quantities suitable to your needs. Storage in clean, dry, low light, cool storage will improve shelf stability.What is the shelf life of whole grain flour once it’s ground?
Whole grain flour has the most nutritional content when freshly ground. For this reason it’s always best to grind flour on demand using a domestic mill. If flour is freshly ground or oats are freshly flaked for the purpose of storing they should be placed in an airtight container in the freezer and used within 2 to 3 months.
