Empure® ES 200 after boiling provides very short, pasty solutions, whilst storing it is building a firm cuttable gel. The starch shows good swelling properties, a good dispersion in hot and cooking liquids and provides moderate viscosity after cooking. It is recommended to use in applications where low viscosity and low shear systems are needed.

Empure® ES 200 is a universal binder and thickener for many applications in the food industry, for example for soups and sauces, fruit fillings, snacks, dairy and bakery products. Empure® ES 200 can be stirred directly into cooking liquids by avoiding of lump building. In bakery products Empure® ES 200 shows an improvement of the crumb structure and can be used as moisture regulator achieving longer shelf life.
