Mode of Action
  • Kappa-Carrageenan is a strongly charged anionic polyelectrolyte of large molecular size. Composed of residues of D-galactose and 3,6-anhydro-D-galactose in the molar ratio 1.1-1.5 to 1 and one sulfate half-ester group for every 2-2.5 monosaccharide units.
  • This negatively charged polymer is capable of forming complexes with positively charged polymers such as protein molecules.

Application
  • Kettle/coppre: DELTAFLOC is added dry to the kettle just prior to casting to the whirlpool.
  • Whirlpool: DELTAFLOC is added dry to the whirlpool after a portion (1/3) of wort has been cast.
  • The dose rate necessary varies from brewery to brewery due to differences in plant design, grist composition, hop rates and liquor composition.
  • Generally dose rates of 1.5 to 3 g/Hl are found to be optimal.
  • A simple optimization test should be carried out on the wort to establish the correct dose rate for best effect.

Laboratory Optimization
  • Prepare a suspension with 1.5 gram of DELTAFLOC in 1 Liter water at 50-80ºC.Boil for 5 min. and allow to cool down. Fill up with distilled water up to 1 liter.
  • (Stock solution) Add a volume of stock solution to a series of clear glass bottles or cylinder flasks containing hot wort taken from the mashroom prior to casting and heated up again to 80ºC.

Let the bottles stay overnight. Observe the next day, wort clarity and different compaction/sediment volumes depending on dose rate. Normally, there is an optimum dosage. Do not overdose.
