GR Callista is another hardy aroma variety bred by the Hop Research Center in Hüll, Germany, Callista kicks off intense fruit flavors of passion fruit, apricot, peach, and blackberry, plus some pine. Low alpha acids ensure this will be a late-addition hop.

AU Enigma™ is a hop variety released by the Hop Products Australia breeding program. This high alpha variety is equipped with notes of pinot gris, raspberries, red currant, and light tropical fruit. This "chameleon" of a hop is best utilized late in the brew to maximize its unique flavor and aroma properties.

Vista (also known as USDA Elite Line 074) is an exciting new aroma variety from the US public breeding program with initial brewing feedback being highly favorable. GR Saphir is bred by the Hop Research Center in Hüll, Germany, Saphir’s low alpha acids, admirable resistance to disease, and familiar citrusy, spicy, and floral notes make it an increasingly preferred stand-in for famous noble hop Hallertauer Mittelfrüh.

Galena is a high-alpha variety and it is developed in Idaho and released in 1978.

USDA 008 experimental variety 008 (also known as USDA Elite Line 008) is an exciting new aroma variety from the US public breeding program. Notes of green apple, peach, and mango are rounded out with grassy and subdued earth characteristics. A great choice for adding a new dynamic to West Coast IPAs and hoppy/hazy pale ales.

Mt. Hood is named for Oregon’s Mt. Hood and released in 1989, this half-sister to Liberty, Crystal, and Ultra was derived from German Hallertauer. As such, its aromatics are subtly spicy and herbal, well-suited to refined lagers.

In collaboration with Tomahawk® and Zeus, Columbus is among the estimated super-high alpha CTZ trio. Along with Cascade and Centennial, it’s also part of the famous Three Cs, imparting pungent aromas of citrus and woodsy resin.

Chinook is often lumped in as a fourth member of the elite group while Cascade, Centennial, and Columbus are considered the Three Cs of American craft brewing. Citrus takes a backseat to intense pine in this high-alpha dual-purpose variety, released by the USDA breeding program in 1985.

Belma® is a dual-purpose varietal named for the road leading to Washington’s Puterbaugh Farms, which found the plant growing up the side of its picking facility. Unique characteristics of strawberry along with melon and other fruits make this a favorite for pale ales.

FR Barbe Rouge is developed in Alsace, France, this aroma variety features notes of citrus fruit and fine red berries to bring a new sensory experience to your brew. Kumquat, orange, lime, redcurrant, strawberry, and raspberry are all represented in Barbe Rouge’s delicate aromatic attributes.

GR Hüll Melon is another of the modern Special Flavor Hops causing such a stir from the Hop Research Center in Hüll, Germany, this Cascade-derived variety’s name says it all: The sweet, fruity aroma smacks of melon - specifically honeydew- along with apricot and strawberry.

Amarillo® is coveted for its bold orange or tangerine-like flavor and aroma though it’s most popular for dry-hopping. Amarillo® is versatile enough to be used for bittering, too.

El Dorado® released to great acclaim by Washington’s CLS Farms in 2010, this dual-purpose behemoth exhibits both high bitterness and fruity candy notes, with pineapple, lemon, watermelon, pear, and stone fruit rounding out the striking sweetness.

Citra® is citrus incarnate, wafting from beer like freshly squeezed grapefruit with some tropical notes and quickly commanding the attention of the craft brewing industry.

Pekko® (ADHA-871) is the dual-purpose hop, bred by the American Dwarf Hop Association and named for the finnish god of crops, brings to the table high alpha acid along with an intriguing mix of flavors like mint, pear, citrus, and floral aspects.

Amarillo® (Organic VGXP01 cv) is coveted for its bold orange or tangerine-like flavor and aroma though it’s most popular for dry-hopping. Amarillo® is versatile enough to be used for bittering, too.

Zappa® is named after Frank Zappa, in collaboration with the Zappa family, this hop is as counter culture as the musician himself. Singled out by Tom Nielsen of Sierra Nevada and brought to production by Eric Desmarais of CLS Farms, Tom described it as having "a unique spiciness, coupled with full-on mango,backed by a sharp citrus, delightful savory and strong deciduous pine" characteristics.

Bravo™ (Organic) is another bittering bomb with astronomical alpha acids. Beyond bitterness, Bravo™ also expresses pleasant fruity and floral notes, making it an easy hop to like.

Eureka!™ is a blast of herbaceous pine gives way to blackcurrant and tropical undertones, all wrapped up in a powerfully bitter package. It’s no surprise this modern hop was once known as “Experimental Pine Fruit,” given its robust, resinous character.

NZ Wakatu™ is stemming mainly from Hallertauer Mittelfrüh and similarly suited for lagers, this hop was previously called Hallertau Aroma. Considered dual-purpose for its moderate alpha acids, Wakatu is more about its aromas of grass, orange blossom, and lime.

GR Ariana is one of the latest unique aroma varieties to come from the Hop Research Center in Hüll, Germany, this high-yield cultivar is a cross between Herkules and a wild male, and ranges in flavor from blackcurrant and grapefruit to geranium and vanilla.

Willamette is an immensely popular hop in American craft brewing, this Fuggle-derived aroma variety was released by the USDA in 1976, taking its name from the Willamette River in Oregon’s important hop growing region, the Willamette Valley. Graceful earthiness, spiciness, and fruitiness are hallmarks of the hop.

Lemondrop™ is the unique Hopsteiner aroma variety- descended from Cascade- expresses not just bright lemon fruitiness, but also a sweetness associated with lemon drop candy. Herbal notes, like green tea and mint, also shine.

Sterling is often utilized as a replacement for one of its primary parents, noble Saaz, as it exhibits similarly clean bitterness with slightly more forward spicy and herbal flavors and is easier to grow, offering moderately high yields and resistance to disease.

Azacca® (ADHA-483) is bred by the American Dwarf Hop Association and named for the Haitian god of agriculture, this hop is descended from the likes of summit and northern brewer. It’s perfect for late additions thanks to intense tropical aromatics like ripe mango.

Centennial is often referred to as “Super Cascade” as it boasts even greater bittering potential than that famous hop, even though its citrus kick is slightly more subdued. This aroma variety, for which Brewer’s Gold provided three-quarters of the genetics, was released in 1990 and is one of the most popular hops in U.S. craft brewing.
