It is an indigestible oligosaccharide made from two to 60 units of fructose joined by β2-1 bonds, most terminated by one unit of glucose. It is the ß2-1 bonds that prevent its absorption by the small intestine, making it a fiber. Oligofructose or fructooligosaccharide (FOS) is a selection of short chains of inulin, or chicory root fiber .
