The bulk density of ImoSweet ™ as a powder is similar to that of sugar or flour. It is stable for a long time at pH values of 2-8 and is therefore particularly suitable for use in functional beverages. Due to its stability even at temperatures of 160-180 ° C, ImoSweet ™ is an ideal sugar substitute, also in baked goods.
- Some Facts about the Production
Isomalto-Oligosaccaride is produced from corn or tapioca starch. The starch is transformed into maltose syrup by enzymatic hydrolysis. This maltose syrup is then further treated with enzymes to transform the glycoside compound into a non-digestible form with 3 to 6 glucose molecules. It has similar properties to oligofructose and inulin. Like these, it consists of carbohydrate chains that are not digestible and therefore mean only a few calories for the body. The difference is that the carbohydrate in this case is not fructose but glucose. ImoSweet™ consists of 3 to 6 glycosis molecules bound by an indigestible glycosis compound. The stomach is not able to break them. The glycosis thus travels through the intestinal tract without being metabolized.
