A water dispersible blend of the extracts of Bacillus subtilis, which includes high concentrations of alpha-amylase, exo-acting beta- amylase, beta-glucanase (gumase), hemi-cellulase, and cellulase along with moderate levels of protease.

Bacterial Amylase is awater‐dispersible blend of the extracts ofBacillus subtilis,which includes high concentrations ofalpha‐amylase, ß‐glucanase (gummase), andhemicellulase along with moderate levels of protease. Bacillus amylases are known for their temperaturestabilities and rapid viscosity reduction of starchsuspensions. Thealpha‐amylase included in the IC product series isan endo‐acting amylase, which means that the branched components of starch including amylopectins arerapidly degraded, the enzyme thus by‐passes thebranch points in the starch components. This rapiddegrading effect can be contrasted to the exo‐acting ßamylasefrom vegetable sources such as barley, whichstops catalyzing when it reaches a similar branch in thecarbohydrate molecule. Temperature stability can begreatly enhanced by the presence of soluble calciumions and by the presence of available substrate.

Bacillus subtilisamylase is particularly useful inindustrial and agricultural processing applicationsbecause of its high degree of stability.

One bacterial amylase unit (BAU) is defined as that quantity of enzyme which will dextrinize one milligram of starch per minute at pH 6.6 and 30°C.
