- Utilization
Ailazyme® DEX with an activity not less than 30.000 Dextranase Units per g can be directly added to dextran containing juices or syrups, either manually or with a dosing pump. The product is best used under the following conditions:

pH: 7.0 and T: 60-85°CSugar refining 10-15 ppm Directly in re-melt tank. The dosage rate is best adjusted with deviations from the optimum conditions. The enzyme is inhibited by metal ions such as Cu and Hg.

Storage & Handling

Ailazyme® DEX is best stored in the original packaging under refrigerated conditions at 4–8 °C in order to retain maximum activity during storage.
