Rucker Old Mecklenburg

Rucker Old Mecklenburg is pure nature. The creamy semi-hard cheese matures in our Wismar cheese cellars for six to eight weeks on untreated spruce boards. We brush it regularly with salt water and coat it with the finest red cultures. The taste of the Alt Mecklenburger changes depending on how long it has matured. We produce this specialty in four variants: Mild, strong, hearty and typically North German with plenty of caraway.

    Naturally matured Tilsiter - this is the favorite cheese of the RUCKER chefs and the trademark product of our dairy. Incidentally, Tilsiter was the specialty cheese from the Ostsee-Molkerei in Wismar, which we took over in 1994. As 'Tollenser naturally matured', the cheese was a coveted delicacy in GDR times.

    A naturally matured cheese classic: Klaus Rücker further developed the East German classic into a cheese as it used to be: Rücker was the first cheese manufacturer in Germany to produce a naturally ripened Tilsiter without preservatives, colorings and additives. This is how we produce the Tilsiter in Germany without any additives.
