Sourdough, called mother yeast, is a very delicate soft wheat sourdough. In the flour finely mixed with pure water different strains of wild yeasts and lactobacilli develop in a very particular natural balance. At Molino Merano we refresh our natural yeast every day and dry it very gently. For this purpose, we have created an optimally protected environment to ensure maximum safety, hygiene and temperature, where the most modern analysis systems are used. Only in this way can we guarantee maximum and constant quality.
