Gdanskie Mlyny Hamburger Flour is produced from high-quality wheat. It must be high in protein and high strength gluten. These parameters allow for a long fermentation process, which allows to obtain the compact crumb structure desired for this type of bread. Due to the high falling number and low enzymatic activity, hamburger bread prepared with this flour has a delicate and soft crust. In addition, low enzymatic activity also affects the light color of the skin.
