Glucose Oxidase 789L

Glucose oxidase 789L can be used to extend the shelf life of soft drinks by scavenging oxygen. This enzyme preparation can also be used to desugar products and prevent browning caused by the Maillard reaction of glucose with amino acids. It can also aid the antimicrobial activity of lactoperoxidase in milk products through the generation of hydrogen peroxide.
